Default Typing by hand when the iPad is expecting bluetooth

My wife's iMac is down. We have an appointment at the Apple store,
but meanwhile she used our iPad for her e-mail.

She tried to write e-mail, but couldn't get the keyboard to come up. I
turned on our blue tooth keyboard and she could use it. I didn't
want to turn blue tooth all the way off in the iPad settings, because
I'd need to reset it later.

Is there an easy way to tell it to use the virtual keyboard?

If your Bluetooth keyboard is so equipped, it may have a "display the
virtual keyboard" button (the Apple one does, top-right hand button)

Beyond that, disconnect the keyboard or turn off BT on the device.

I turned off my Apple keyboard by pushing the button on the right. And
then I waited for the virtual keyboard to come up (within the new
e-mail). And waited until I gave up.

My guess is that you didn't actually turn off/disconnect the keyboard.

Press and hold the power button longer and see if it works? Or
alternatively, try the "Eject" looking button, this may offer you a
virtual keyboard despite the Bluetooth keyboard being connected.

Perhaps you didn't actually turn it off? Hold down the button until the
green light goes out. Takes about two seconds.

You can also check whether the iPad thinks it is talking to the keyboard
via Settings > General > Bluetooth.
