Should I upgrade iTunes to the latest version before backing up my iPad2
and upgrading it's operating system?
If I do upgrade iTunes to the least version then will it except to see iOS5
on my iPad and if it sees an older version of the operating system will it
cause problems when backing up my iPad system?

This should be an easy question as many iPad2 owners have already upgraded
their iPad to iOS5.

You have no choice. You must be running iTunes 10.5 in order to be able
to install iOS 5.

No. iTunes 10.5 is compatible with all versions of iOS at least as far
back as 3.x, probably earlier.

No.

Yes.

I had some teething trouble due to Apple's servers being overloaded on
day one, but after a couple of syncs the iPad settled down again.

Backup first; upgrade iTunes; then upgrade iOS.

No, but backup first regardless.
