now contains over 1500 disk images ready to stream directly to your //

What baud rate are you getting using the cassette port?

If you use HIFI you'll get 9600 bps, however 50% of testers had
problems with their HW--one tester with two identical rigs had only
one that supported 9600. If you use 8KFI you'll get 8000 bps (still
6x faster than native). Both support compression to speed things up.
The total time ranges from 52 seconds to 4 min, 12 sec. Not too bad.
AFAIK, 8KFI works on all machines. Click the README link to see a
video from the main page.

Does the Apple Disk Server work with games that require further loading
after boot? I assumed that with the previous examples included, it
could only play the single load games? If that's not the case, that's
awesome!

Apple *game* server serves single-load games, no disk required.

Apple *disk* server serves whole disk images that reconstitute a real
floppy disk at the other end. So there's no problem with loading after
boot, because you have a real disk!
